This Tapioca is called as maravallikilangu or
kuchi kilangu or kappa kilangu
This is seasonal vegetable
sabudana pearls are made from tapioca
mom:what is the rate of 1kg?
tapioca vendor: Rs 30 for 1kg and Rs 10 for chips grating
peel the skin and grate in chips grater
mom:I used to get kappa kilangu from this vendor only
I am regular customer
Vendor explaining chips making
Dry for sometime in a cloth and fry in oil
You can grate in your bajji or chips grater
spread the grated kappa on cloth for sometime
It should not fully dried.Some moisture should be left
Now it is dried little .Some moisture is left.Let us fry
Heat the oil well in high flame
when it is hot enough to fry, Keep in sim flame and
deep fry the chips
add gently .fry both sides till bubbles disappers
flip other side
fry according to you choice.Some will like golden brown color
chips.some will love white color chips with light brown on sides
At this stage,you can take out when it is white color and
no more bubbles left.Both taste of chipd color differs
if you cook for some more time ,
you will get golden brown all over
before frying next batch of chips,heat the oil and then fry
drain the oil
this one is golden brown.Dont burn it
crispy chips is done.Let us mix spice
salt as needed
chilly powder as needed
add chili powder according to your spice level
transfer to big mixing bowl
add spice and salt and toss well till it get mixed well
Homemade is always healthy
Store bought chips are fried in refried oil which is unhealthy
store this chips in air tight box for 1 week
always use the kappa kilangu when it is fresh
do recipes with it once you get it immedietly
dont use the old tapioca which has green or black spots
