Hi friends,welcome to madhu samayal
Onion Vadam ( Killu vengaya vadagam and murukku
Vengaya vadam)
Maavu Pachai arisi( Raw rice ) 4cups
Sago pearls 1 cup ( Big sabudana)
rinse well and dry under sun in a cloth
Both rice and sago are rinsed and spread on cloth
Dry this well and grind to fine powder in Rice Mill
Rice and sago are dried and ground to fine powder in
rice mill
1cup ground flour
1/2cup small onion or big ones
some curry leaf
1/2 lemon
1tbs coarsely ground redchillies
or green chilli paste
1/2tsp hing
Powder Salt as needed
coarsely grind or chop onion and curryleaf
zeera 1tbs
fennel seeds1/2tbs
Heavy bottomed pan
3cups water
let it boil well
Always prepare vadagam on nice sunny day
Boiled water
Reserve 1/2 cup of boiled water to use it further
if needed
old raw rice means 3cup water
new raw rice means 2 1/2cup water
add flour and stir continuously to avoid lumps
cook in sim flame only
salt,hing
stir often in sim till it gets to thick soft dough like
Idiappam/ kozhukattai dough
after 5mins, add zeera ,fennel ,chilly flakes, ground
Or finely Onion curry leaf
mix well
Total cooking time =10mins
i didnt add that reserved 1/2cup hot water
Total water measurement for 1 cup flour= 2 1/2cups
water
1/2lemon before you off the stove
non sticky with wet hands
you can form balls .This is the dough consistency
close it till it gets warm enough to handle it
warm vadam dough is pinched into small sizes on wet
cotton white cloth under sun ..Grease fingers with water
small size vadam will dry easily
you can also make this dough into long muruku
strips if you have chopped onions curry leaf finely
you can make vadam shape of your choice
lets us make this under hot sun in terrace or balcony
1/2 dough is made as killu vadam( pinched vadam)
Another 1/2 dough is made as murukku vadam
After 1 day of sun dry
remove these vadams from cloth by sprinkling water
at backside of the cloth and let it sit for 2 seconds
And then remove
comes out easily
Removed all vadams from cloth and spread on plate
Let it dry under sun for another day
till vadam is completely dried and moisture free(crispy)
break long strips into small pieces to fry it easily
fry in hot oil in sim flame
These vadams will be yummy combo for rice,
variety rice, rasam,curd or as sudden snack craving
These vadams are so yummy with onion flavor
We have got many vadam with just 1 cup flour
Do this in summer and store it in air tight box
for one year .Thank you for watching
