This recipe was so easy and delicious! I made my own applesauce by processing a few old apples in my food processor and added a little sugar and cinnamon. Used coconut oil for the oil and ended up having to use a 9 inch glass pie pan instead of an 8 inch square but it still turned out beautifully. Probably could have used a few more minutes in the oven as it came out a little moist and it seemed to be undercooked a little but the texture was a lot better after the cake was completely cooled. SO GOOD and simple! Thank you Manjula! Can't wait to try some more of your recipes!

Getting ready to make this, thanks so much!! Update: I make it a couple weeks ago, and LOVED it!! I only had self rising flour, so I cut out the salt and baking soda. I also had to cook it about 15 extra minutes, but my stove door is a tad warped (about 1/16 of an inch open gap). It was softer on the inside than this one, but I loved it as it turned out SO much. I'd love it either way. I'm off to make it again now.
