DIWALI SWEETS

BESAN BURFI

Butter – ½ CUP
Besan / chickpea flour – 1 cup
Condensed milk – ¾ cup
Cardamom powder – to taste
Nuts – to garnish

CHERUPARIPP LADDOO

Cheruparippu / Split green gram – 1 cup
Butter – 4 tbsp + 2 tbsp + 2 tbsp
Milk powder – ¾ cup
Sugar – ¾ cup
Water – 2 ½ cup
Coconut oil -3 tbsp
Nuts – to garnish

NUTS LADDOO

Dates – 2 handfuls
Almonds – 1 handful
Sunflower seeds – ½ handful
Ghee – ½ tbsp

PEDA

Butter – 4 tbsp
Sugar – ½ cup
Milk – ½ cup
Milk powder – 2 cups

Hi everyone, today I am here with four easy and simple sweet recipes for Diwali..

These recipes can be quickly made and taste great..

The first sweet is a besan burfi..

To prepare the besan burfi, into a pan, add half cup of butter or ghee and melt..

You need not melt if it is ghee, throughout all the recipes..

After melting the butter or ghee, add a cup of besan/chickpea flour to the pan and keep roasting the chickpea flour in the ghee or butter until it is roasted and turns fragrant.

After roasting for about 7 minutes, the consistency will turn to little thinner and liquid like..

Once it turns into a thin cream and changes the colour a bit, add ¾ cups of condensed milk and cardamom powder to taste and mix well..

After adding the condensed milk, keep mixing it well until it combines and starts to leave the pan..this process is quick..

Once it’s all well combined transfer it into a setting tray greased with ghee or butter.

After the burfi cools down and sets in the tray, you can garnish with some chopped nuts, cut and serve!

For the second sweet, which is split green gram laddoo, add a cup of well washed split green gram into a pan and dry roast until all its water is gone..

Once all the water from the split green gram is dried up, add 4 tablespoons of butter and fry the dal really well in the butter until it turns golden..

After the split gram cools down, add it to a mixer grinder and powder it

Meanwhile add ¾ cup of powdered sugar and ¾ cup of milk powder into a pan and add the powdered cheruparippu. .

Then turn on the flame and mix everything well together until the sugar melts and then starts to harden/thicken..

When it all mixes up, add 2 ½ cups of boiling hot water to the pan and keep mixing..

Until well combined, keep mixing and let it turn a little thicker..

Once it starts to thicken, add 2 tablespoons more butter or ghee..

Again after some time, add two more tablespoons of butter..

I have used a total of half cup of butter for this recipe (8 tbsp)

After adding the butter, keep cooking the mixture until it starts to leave the pan and thickens.. this must be done on a medium flame only..

After reaching a thick consistency, at some nuts fried in coconut oil or ghee..

I have used coconut oil because I like its taste..

I have fried some chopped badam and pistachio in 3 tablespoons of coconut oil and I am going to add it to the laddoo mixture and mix well..

When the mixture starts to cool down, make little laddoos out of the mixture and serve..

The third sweet recipe is a dry fruits laddu

To make the laddu, take 2 handfuls of dates in a mixer grinder and grind it until it turns into a sticky paste..

Next we need to combine a handful of almonds with the dates paste

You can do this in the mixer grinder in batches

Add the almonds along with the dates and grind it again until the almonds powder and combine well with the dates

Once the almonds and and dates are well combined, add half handful of sunflower seeds and grind it well again

After all these three ingredients are combined, transfer into a large mixing bowl and add half a tablespoon of ghee for taste..

After adding the ghee, mix the mixture with your hands and knead it like a dough and roll into smooth and tasty laddoos..

Adding ghee to the laddu mix is totally optional.

You can refrigerate these for a long time as well.

To make the 4th sweet, which is milk peda, add 4 tbsp of butter in a pan and melt it..

Do this on a low flame so that the butter does not burn.

To the melted butter, add half cup of powdered sugar and mix well..

Once the sugar and butter is mixed, add half cup of milk and mix well..

Once all the ingredients are mixed well, add 2 cups of milk powder and some cardamom powder to taste..

Mix and combine everything really well on a very low flame so that the milk powder does not form any lumps..

Keep cooking on a very low flame until you get a very thin and buttery paste..

At first it will turn a little thin and liquidy because of the sugar that we have added..

Keep cooking until it turns thick and leaves the pan..

Once it turns thick, turn off the flame and remove it from the pan to another plate..

After the mixture cools down, shape them into desired shapes and serve!
