Description :
Sakinalu is a traditional Telangana Snack, popularly prepared in every household of Telangana for festivities. Made with Rice Flour and Sesame Seeds. This deep-fried round shaped snack is similar to Muruku yet tastes different.
Ingredients:
· Rice Flour : 1 kg ( 1kg rice soaked, dried and ground)
· Sesame Seeds : ½ kg
· Cumin Seeds : 2 tbsps
· Carom Seeds : 2 tbsps
· Salt : To taste
· Water : As required
· Gold Drop Refined Sunflower Oil : For deep frying
Method of Preparation :
· Take 1 kg of rice (any variety), wash them thoroughly.
· Soak them overnight, drain off the water using a sieve/ strainer.
· Let them rest in the sieve for 10-15 minutes.
· Dry them by spreading them on a cotton cloth for 10-15 Minutes.
· Grind them into a fine powder, with the help of a grinder at home or from a flour mill.
· Run the ground powder through a sieve to get a fine powder to make Sakinalu.
· In a mixing bowl, add the fine rice flour, ½ kg sesame seeds, 2 tbsps of cumin seeds as well as carom seeds.
· Mix them all, add salt as needed.
· Take a small portion of the flour mixture and knead it into a dough using water.
· Mix them in small quantities only.
· Spread a cotton cloth on the counter, take lemon sized dough and twist them into strings and rotate them in a circular motion
· Let them all dry for some time.
· Heat Gold Drop Refined Sunflower oil in a wide pan
· Lift the discs from the cloth with the help of a skimmer or spatula
· Deep fry them on high flame.
· Flip and fry them on the other side as well till crisp and a slight change in colour is noticeable
· Crispy and tasty traditional Sakinalu are ready.
