Egg Fried Rice
Ingredients

To Cook The Rice
Basmati Rice – 1 Cup
Water
Salt – 1 Tsp

To Make Scrambled EggsEgg – 4 Nos
Oil – 3 Tsp
Sprinkle Salt
Pepper

To Make Egg Fried Rice
Oil – 2 Tbsp
Chopped Garlic
Chopped Ginger
Onion – 1 No. Finely Chopped
Red Chili – 1 No. Finely Chopped (Optional)
Green Chili – 1 No. Finely Chopped
Capsicum – 1 No. Finely Chopped
Salt – 1/2 Tsp
Pepper
Soy Sauce – 2 Tsp
Spring Onion – A Few Thinly Sliced
Scrambled Eggs
Cooked Basmati Rice
Chopped Spring Onion Greens 

Method
Heat some water for cooking the rice
Add salt, and basmati rice
Cook the rice till they are fully done
Strain the rice and keep it aside
Heat a pan with some oil, crack open the eggs into the pan
Sprinkle salt and pepper
Scramble the eggs and cook till they are fully done but a little soft and keep them aside
Heat a pan with some oil, add garlic, ginger, onions, red chilies, green chili and saute
Add capsicum and stir fry
Add salt, pepper, soy sauce, spring onions and mix well
Add the scrambled eggs and mix well
Add the cooked rice and mix well with the eggs
Finally garnish with some spring onion greens and a fried egg and serve the Egg Fried Rice

Chilli tofu
Ingredients

Tofu – 200 Gms
Sesame Oil – 2 Tsp
Chopped Garlic – 1 Tsp
Chopped Ginger – 1 Tsp
Onion – 1 No. 
Capsicum – 1/2 No.
Soy Sauce – 1 Tbsp
Red Chili Sauce – 2 Tbsp
Tomato Ketchup – 1 Tbsp 
Vinegar – 1 Tsp
Red Chili Flakes – 1 Tsp
Water – 1/2 Cup 
Corn Flour – 1 Tsp
Water 
Spring Onion Greens

Method
1. Firstly, marinate the tofu pieces with red chili sauce, soy sauce, salt, and pepper
2. Marinate it for about 10 minutes
3. Once the tofu pieces are marinated, pan fry the pieces till they are golden brown in color and keep them aside
4. Heat a pan with some oil, saute ginger, garlic, onion, capsicum and spring onions
5. Add the sauces and mix well
6. Mix the cornflour in some water to make a cornflour slurry and add it to the pan
7. Add the fried tofu pieces and bring the gravy to a boil
8. Garnish it with chopped spring onion greens and serve it hot
