Most of the food here are made keeping the Indian Palette in consideration to keep the recipe as authentic as possible, although these foods may be what any South Asian may relish. It’s important to keep in mind the spices used must be taken into account by the viewer and cook according to their threshold, preference and health conditions.

With that out of the way, today we will see how to prepare

Ridge gourd bonda/bajji
Ingredients:
Ridge gourd : 1 medium size
Gram flour(Besan):1 cup
Rice flour :1/2 cup
Oil : 1 cup (200 ml)
Red chilly Powder:1 tsp
Asafetida : less than ¼ th tsp
Carom seeds(ajwain):1/2 tsp
Salt to taste
Water as required

Procedure:
First step is to pour little (2 tsp) water and soak asafetida. Pour oil in a kadai(thick bottom vessel) and heat it up. In the mean while peel and cut ridge gourd in to thin slices and keep aside. Take a bowl and add gram flour, rice flour, salt , red chilly powder, carom seeds and mix well. Now add asafetida water and mix well. Now add water and mix it to idly batter consistency. Now dip the ridge gourd slices in this batter and put it in hot oil and deep fry till it turns crisp and golden brown and serve hot.
