Unniyappam /പഴം ചേർക്കാതെ നല്ല സ്പോഞ്ച് പോലത്തെ ഉണ്ണിയപ്പം/ മലയാളിയുടെ ഇഷ്ട പലഹാരമായ ഉണ്ണിയപ്പം

Ingredients: (Makes 70 unniyappam)
Rice Flour – ½ cup (Roasted)
Maida / All purpose flour – ½ cup
Rava / Semolina – ¾ cup
Wheat Flour – ¾ cup
Jaggery – 400g
Black sesame seeds
Coconut bits – ¼ of a small coconut
Cardamom
Salt – 2 pinch
Ghee – 2 tbsp
Coconut Oil

Steps:
Melt jaggery in 1½ cups of water. Switch to medium flame once the water boils.
Set aside.

Mix rice flour, maida, rava and wheat flour in a mixing bowl.
Add salt and lukewarm jaggery syrup.
Mix well by adding ¼ cup water. Set aside.

Heat 2 tbsp ghee in a small pan and fry coconut bits till golden.

Check the consistency of the batter. Add water if it became thick.
I added ½ cup of water.
Add sesame seeds.
Add the fried coconut bits along with the ghee when it is lukewarm.
Mix the batter well.
Cover and let it rest for 14 hours. I added ¼ cup water after 3 hours as the batter was thick.
You can rest the batter for extra 2-3 hours also.

Add cardamom powder and mix well.

Heat the unniyappam pan and add coconut oil just to fill the moulds.
Heat oil in another bigger pan also.
Add a spoonful of batter in each mold on high flame and switch to medium flame after a second.
When one side is lightly roasted, transfer it to the bigger pan with a toothpick and cook till done.
Do not overcook.
Remove from the oil when appam become golden.
Enjoy the unniyappam.
