ബാക്കി വരുന്ന ചോറുകൊണ്ട് നല്ല പഞ്ഞിപോലത്തെ ഉള്ളി മസാലയിൽ മൊരിഞ്ഞ അപ്പം / Appam with Leftover rice
Description :
Ingredients: (Makes 12-13 appam)
Cooked rice – 1 cup (I used kuthari. You can use any variety.)
Milk – ¾ cup (Coconut milk can also be used)
Egg – 1
Rice flour – 2 tbsp
Onion – 1 medium (Finely chopped)
Green chilly – 1 (Finely chopped)
Curry leaves (Finely chopped)
Turmeric powder – ¼ tsp
Fennel seeds – ¼ tsp
Mustard seeds – ½ tsp
Salt
Oil
Steps:
Add cooked rice, milk and egg to a mixie bowl and grind it into a smooth paste.
Add rice flour and mix well.
Transfer to a bowl and add salt.
Heat oil in a pan.
Add mustard seeds and let it splutter.
Add fennel seeds.
Add onion, green chilly and curry leaves.
When the onion starts to brown, lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Switch off and add this to the batter.
Let it rest for 5-15 minutes.
Heat a griddle / dosa tawa.
Season with some oil.
Pour a ladle of the batter.
Cover and cook on medium flame.
Sprinkle some oil/ghee.
Enjoy the soft appam as such or with chutney.
