Goan Red chicken curry is simple and tasty dish i mostly prepare for my sunday meal. This dish looks very spicy but its not, addition of potatoes, vinegar and sugar makes it more palatable. My mom prefers adding few sprigs of curry leaves while sauteing onion & Tomatoes which gives more flavour to this dish. Checkout this recipe i’m sure your’ll will love it.

■ Ingredients & Quantity
Onions (Peeled & Chopped) – 2 Nos
Tomatoes (Deseeded & Chopped) – 2 Nos
Potatoes (Peeled & cut into 4 chunks) – 2 Nos
Curry leaves (Mini) – 5 Sprigs
Vegetable Oil – 3 Tbsp
Goan toddy vinegar – 2 Tbsp
Sugar – 1 Tsp
Salt – 1 Tsp
Maggi cubes (Stock cubes) – 1 Nos
Fresh Coriander leaves for Garnish (Chopped) – 3 Tbsp

For Marinade (Duration – 25 mins),
Chicken with bones (cleaned & Washed) – 1 Kg
Salt – 1 Tsp
Ginger – Garlic Paste – 1 Tsp
_ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _
For Masala,
Kashmiri chillies – 8 Nos
Cumin seeds (Jeera) – 1/2 Tsp
Cinnamon stick – 1 inch stick
Cloves – 10 Nos
Black peppercorns – 10 Nos
Green Cardamon – 2 Nos
Turmeric Powder – 1/2 tsp
Ginger (Peeled) – 1/2 inch piece
Garlic ( Peeled) – 5 Cloves
Water as needed

■ Method,

1) Wash the chicken thouroughly and marinate with salt and ginger – garlic paste and set aside for 25 mins.
2) Grind all the ingredients mentioned for masala using water.
3) Heat oil in a vessel.
4) Add the chopped onion and saute till onion turns light brown in color.
5) Add curry leaves and chopped tomatoes and saute till tomatoes are mashy.
6) Add the ground masala and coom for few mins and than add the residual water.
7) Add the marinated chicken along with potaoes and mix well. Cook for 5 mins till the chicken and potatoes are almost cooked.
8) Add goan toddy vinegar, sugar and maggi cubes to enhance the dish. Cook for more 2 mins.
9) Finish it off with freshly chopped coriander leaves.
10) Serve with steamed rice or pao (goan bread)
