CRISPY DOSA
INGREDIENTS
Raw Rice – 2 Cups
Par Boiled Rice – 2 Cups
Black Gram (de-husked) – 1 Cup
Fenugreek Seeds – 1Tsp
Salt – 4 Tsps
Oil and Ghee – As Required

METHOD
1. Soak raw rice, boiled rice, black gram dhal and fenugreek together in water after washing.
2. Grind to smooth paste after 3 hours. Add salt at the end of grinding.
3. Allow to ferment for 18 hours (minimum).
4. Heat a dosa pan and pour a ladle full of batter in the centre.
5. Spread from the centre to form a thin dosa.
6. Add oil and ghee once it starts browning.
7. Serve when it turns crisp.
