Ingredients: (Makes 27)
Urad dal – ½ cup / 90g
Water – 9-10 tsp
Baking soda – ½ tsp
Gingelly oil / Sesame oil – 2 tsp
Salt – ½ tsp
Maida – For dusting
Steps:
Finely powder urad dal in the mixie without any granules.
Transfer this to a mixing bowl.
Add baking soda and salt to it and mix well.
Add 10 tsp water and mix well.
Add 2 tsp gingelly oil.
Make a dough out of it.
The urad dal flour is not as smooth as wheat flour.
So it needs more pressure to knead.
Once the dough is in the consistency of chapathy dough, flatten it out by hitting with a pestle.
Then fold in half and flatten again.
Repeat it until the dough becomes almost soft. I folded and flattened it 12 times.
Knead the dough again by stretching with your palm applying pressure till the dough becomes soft.
Roll and smoothen it out into a thin elongated log/pipe.
Maintain uniform thickness throughout.
Using a knife, cut the dough into small pieces.
Traditionally, tapioca powder is used to dust the dough before flattening. Since I do not have it now, I am using maida.
Dust some maida and flatten each piece into thin discs like chapathy.
Make it as thin as possible.
Repeat for the rest of the pieces.
Stack them and shake off the excess maida.
Press a round lid on to the stack and cut circles out of it.
Separate each circle.
To dry them, you can either lay them out in the hot sun for 5-10 minutes or leave in the oven with oven light on.
Heat oil in a pan and slide in the pappadam.
Flip and cook both sides.
Your homemade pappadam is ready.
