Carrot Soup (Light, Oil-free Appetizer)
INGREDIENTS
Diced Carrot — 250 gms
Finely cut Onions — ¼ Cup
Water — 2 Cups
Salt — To Taste
Sugar — ½ Tsp
Grated Cheese – Optional
For Spice Bag:
Green Chillies — 1 Small
Mint Leaves — Few
Ginger — 1 inch piece
METHOD
1. Crush Ginger, Chilli, Mint together coarsely and tie in a muslin bag.
2. Heat 2 cups of water in a pressure pan.
3. When it starts boiling add onions, carrot and the spice bag.
4. Close the lid and pressure cook for one whistle.
5. Open the lid, remove spice bag, cool and grind in a mixie.
6. Strain the soup and heat it before serving.
